Pumpkin Spice-Tini | Recipe

After my daughter, Lola, and I made a batch of Straight Up Pumpkin Puree, we were left with the job of figuring out what to do with it all. I'm a mother of three, a teacher, and someone who tries to make a home-cooked meal five days a week. Between all the craziness, I like to count my blessings; secretly eat my kids' chocolate, while giving myself a pep talk about how I'm only one person; and have a nice drink here and there.

Could we have made pumpkin bread? Yeah, of course, but that's not where my mind went. Awhile ago, I went to a spot in Mattituck here on Long Island and they made a great pumpkin cocktail. Naturally, I thought, I can make a pumpkin cocktail.

I know my way around a martini shaker, so this one took no time at all. Be warned, it's a martini; it may look cute, but it can knock you on your behind.


Pumpkin Spice-Tini
1 serving
What you need:
2 oz pumpkin puree (canned works)
1 oz Rumchata
1 oz Kahlua
1.5 oz vanilla vodka
ground cinnamon
Fill your shaker with ice
Add all liquid ingredients
Shake vigorously until puree is broken up and well blended
Pour into a martini glass
Top with a sprinkle of cinnamon and give it a swirl
This drink is just right with all of this cold weather, and the Kahlua is a fun nod to all of those pumpkin coffee drinks that are so popular. If you find that this is drink is a little too strong for your liking, add some milk, cream, or half-and-half.
